Regional Pulled/Chopped/Shredded Pork BBQ Sandwiches
« on: February 22, 2012, 03:02:01 am »
My two favorites would be the Pennsylvania Dutch and eastern North Carolina styles although they're all good.   :)

The PA Dutch version utilizes chopped and shredded pork and is served on a buttered and toasted roll.  No cole slaw required but lard-fried potato chips on the side definitely are a necessity.  LOL

2 cups browned and roasted pork
1 small finely chopped onion
1 stalk finely chopped celery or 1/4 teaspoon celery seed
1 tablespoon butter
1 tablespoon flour
1/3 cup water
1 tablespoon brown sugar
1/4 cup ketchup
1 teaspoon yellow mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon salt
black pepper to taste

Saute onions and celery in butter.  Stir in flour.  Add water and rest of ingredients.  Simmer and serve when hot.  Enjoy!!!   ;D

That sounds really good ! I made pulled pork yesterday in the crock pot. I have never made my own BBQ sauce though...always use sweet baby rays...but I'm gonna try this !!

Yeah Kate, since the PA Dutch style recipe utilizes plain oven-roasted pork it should work okay with the Crock Pot cooked pork also.  With the eastern North Carolina style, the pork is normally slow roasted in a grill/smoker with wood chips added for additional flavor but I'll use that peppered sweet and sour vinegar sauce with the plain chopped and shredded oven-roasted pork as well...
