I've really come to enjoy these. Most people say they're difficult but with this recipe they aren't at all. And my husband seemed to like them, and he don't really like anything.
2-3 table spoons of butter cut into pieces
2 large eggs
1 cup whole milk (room temp if you can or put it in the microwave for a little)
1 cup flour
1/4 cup of sugar
1/2 teaspoon salt
I also add a little thyme and a few other herbs
Preheat the oven to 400. While its heating up, put a little bit of butter in each tin and put it in the oven so it melts. Mix up the rest of the ingredients in a bowl. It will kind of resemble pancake batter. It may be slightly lumpy but that is okay.
Take out the muffin tin with the melted butter in it and scoop in the batter a little at a time. I use an ice cream scoop to do this. Fill each tin about half full (during this process I will sometimes add a little shredded cheese, chopped, ham, or bacon. You can put anything in them or nothing at all, just don't over fill)
Put them in for 15 min. After 15 min, change the temperature to 350 and let them cook another 20 min. They will look like they're going to burn but they wont.... Serve immediately
