Kate's Mac and Cheese

1 box of elbow macaroni (16 oz box or so)
2 cups Milk
2 Tbsp butter
2 Tbsp of flour
1 bag of sharp shredded cheese--DIVIDED
About 1/2 a can of parmesan cheese

Heat Oven to 375.
Cook the elbow macaroni...
While the noodles are cooking... combine the milk, butter, flour, and about 2 cups of the cheddar cheese in a separate pan... whisk it until thickened and a little bubbly... Then take it off the heat.

Dump the cooked and drained noodles in a casserole dish and pour over the cheese mixture. Sprinkle the rest of the cheddar cheese on top and then generiously sprinkle the parmesan cheese. I like a lot.

Cook for 45 minutes uncovered...The top should be golden brown.

    Ooooo, mac 'n' cheese!!!   {drool}

    Your recipe isn't quite as rich as mine, Kate, but I definitely wouldn't feed it to the dogs, either.  LOL   :)

    For comparison, my cheese sauce consists of one stick (1/4 lb) of butter, four heaping tablespoons of flour, two cups of whole raw milk, one teaspoon of sea salt, and at least one pound of shredded New York State extra sharp cheddar.

    Besides macaroni and cheese, I'll combine the sauce into an asparagus and cheese or broccoli and cheese casserole dish as well.  Just cook and drain the veggies well first.

    Oh yeah, and I'll always top all three off with a nice layer of bread crumbs which ends up forming a nice top crust once baked.

    Damn, you just gave me some serious munchies!!!  Good thing I've got a big bag of salted-in-the-shell peanuts handy.   8)

    WOW!  :o That sounds amazing. I'm hungry now too!  ;) I'll have to try out your recipe! I often work until late in the evening, so I have to be quick! Sometimes I prepare it the night before.  Mac and Cheese is the best comfort food!
