Crockpot lasagna. Easy and Great!
« on: October 7, 2013, 06:05:13 pm »
I needed something fast for dinner today...so I came home on my lunch break and put this together. It worked out amazingly! I kinda threw it all together so the portions may not be exactly as stated. Maybe that's what makes it good.

1LB sausage (your favorite kind, I used mild pork sausage)
1 bag shredded mozzarella
grated or powdered Parmesan cheese in the can.
1 TBSN basil
1 tub of cottage cheese (12-16 oz I think)
9-12(?) uncooked lasagna noodles
1 can tomato sauce (My fav is chef boyarde spaghetti sauce b/c my husband doesn't tomato chunks)
1/2 an onion- chopped
2 crushed garlic cloves or garlic powder.

Cook the sausage and onion until warm, not cooked all the way... I was in a hurry, but it works!
Dump your tomato sauce in, basil, and garlic, stir.

Layer the mixture on the bottom of the crock pot pan, follow with lasagna noodles (I broke 2 in half per layer) then a layer of cottage cheese, parmesan cheese, then a heavy layer mozzarella cheese.

Continue this layering three times until the top layer is all mozzarella.

Cook in crockpot high for 5 hours.
It is better than my normal lasagna and my husband had 3 helpings. Its about gone now!

     {help}  I cook the sauce for 8 hours in a 5 gallon pot.  Fresh home grown spices.  I can the sauce to preserve it.  My children come by just to beg jars of sauce.   {hug} I have people that get Lasagna from me for special occasions.  My standard one is 8 lbs.  My Sicilian mother would come back from the grave, and stab me to death with her wooden sauce spoon if I made it in a crock pot.     {yes}

    Shown is a 16 lb lasagna.  Or as I call it, Coma in a pan.

    Oh I agree that there is nothing better than lasagna from a pan taking the time to prepare a wonderful dish. However,  the intention of this recipe is to eliminate the down down time by stuffing the Crockpot and heading to the garage.  This way I can maximize my day being more productive while serving dinner late without being in the kitchen all day.  I would rather be in the garage turning wrenches getting grease under my nails :)

    When I cook, I cook.  When I wrench, I wrench.  {cool}

     Being "Family" means that cooking is a genetic necessity.  I do not consider it down time.  Since I have the sauce canned, a lasagna takes about 10 minutes to put together, and  1 hour to cook.  I set the timer on my phone, or I have one of my kids let me know when it is done.  We can "smell" when it is ready.  Training!

    A 16 lb pan makes about 10 meals (for 2) that can be frozen for quick eats.  I cut it and freeze it in bags.  I have even made several whole pans, and froze them for future use.  (within two weeks)

    That way when I come in to clean up, I can transfer a meal to the Nuke, and have it ready when I am clean.  I hate washing the crock pot.

    Your way sounds good, but there would be a contract out on me if I did that in my household. {flame}
