2 tbsp olive oil
2 cloves garlic, crushed
hot red pepper flakes (a few shakes)
6 boneless skinless chicken breasts (I used 5, but they were huge!) (or you can use shredded chicken)
2 cups marinara sauce (whatever your fav is)
1/4 cup chopped basil
8 oz mozzarella, shredded --divided.
4 oz Parmesan, grated -- divided
1 (5-oz or so) package garlic croutons
Put the olive oil and the crushed garlic on the bottom of your casserole dish...spread it around. Spread the red pepper flakes on top of that ( three shakes or so)
Next, lay the chicken breasts in the dish... basically cover the whole pan with them. They can over lap a little...just depends on how big they are.
Pour the 2 cups of marinara on top of the chicken.
Next, layer on the chopped basil leaves. Fresh is best if you have it but dried works.
Now sprinkle over only half (4oz) of the shredded mozzarella and half (2 oz) of the parmesan.
Dump the garlic crutons over the cheese. This is what makes this dish special. I prefer a more expensive bran cruton.
Last, sprinkle the rest of mozzarella and parmesan cheese over it. *i always like a little more cheese*
Bake at 350 degrees for 45 minutes. The crutons actually become crunchy on top and the bottom of them soak up all the flavor, so its amazing!!
