Grilled Amber Jack

A lot of folks will just smoke amber jack and use it for making fish spread but it's amazing this way. My family loves it, even my kids who don't normally like fish. ;D

Grilled Amber Jack

4 lbs Amber Jack Steak Fillets about 1 thick
2 Cups Mayonnaise
2 Tbsp Everglades Seasoning
1 Tbsp Olive Oil

bag of Mesquite Wood Chips

Take steaks and dry with a paper towel.  Slather mayonnaise on all sides of fish and place on pan.  Sprinkle Everglades Seasoning generously on all sides of fish.  Cover grill top rack with aluminum foil and spread olive oil on it to prevent fish from sticking.  Fold a piece of aluminum foil about 10x10 inches square creating sides and place on half of bottom rack. Place fish on top rack and cook at high heat for 20 minutes.  Check fish periodically.  You should not have to turn it over.  When fish is done it will flake easily with a fork.

Serve with red new potatoes cooked in an oven with onions, garlic & olive oil.
